This variety germinates relatively late and is well sheltered from spring frosts. It ripens later, requires more heat to mature, and is susceptible to autumn rains. In the Bordeaux region of France, for example, cabernet Sauvignon ripens about two weeks later than Merlot. This variety needs to be planted in a warmer area to achieve the ideal ripeness, and with good drainage soil, it can produce high quality grapes.
